I am thrilled to find chocolates for sale that are gluten free!  It&#039;s hard, though, for Celiac&#039;s who spend their lives avoiding wheat as an ingredient to see the &quot;Maltitol (wheat)&quot; in the list of ingredients for your products and not get scared. Can you possibly provide more information about the process by which gluten is removed from your products?  How much gluten does the mixture have before processing?  How do you guarantee that all of your products have &lt;10 ppm of gluten?  How often do you test your products?

This kind of information would go a long way to making Celiacs comfortable eating &quot;Maltitol (wheat)&quot;.  Thank you again for helping Celiacs enjoy the chocolate many miss so much!
